I had pinned a recipe for carrot fries a few weeks ago and have been thinking of them ever since. But things are warming up around these parts, and I'm back to thinking up ways to avoid using my oven and heating up the kitchen. These were super easy to put together, and they were really good! We'll definitely do these again.
I used three large carrots and some fresh asparagus - tossed the veggies in some lemon juice and olive oil, layered them in the grill basket, and sprinkled with kosher salt. {Next time we'll put them in separate baskets. The carrots really needed to be turned throughout the cooking - this time was kind of a test.}
Grill for 10-15 minutes or until the carrots are done to your liking. There was a mix of soft and slightly crunchy in our batch, and I think we preferred the softer version. The carrots got really sweet as they cooked, and these almost tasted like sweet potato fries.
Wow these were good.

I have never cooked a vegetable on the grill! Something I suppose I should try eventually...
Yummy! We're getting so many veggies this summer in our CSA box that we'll need to start doing some grilling.

We did nt cook outside once last year, in fact we are considering getting rid of the barbecue! That's the difference between your home and mine!
Those veggies do look good though and I guess we could do them on the griddle on the oven indoors!
We get about two days a year when we can cook outside (and boy do we enjoy them!) But in the oven inside we like to roast parsnips because they come out tasting like cheese and onion flavoured crisps

On my grill you'll find green peppers and onions sprinkled with salt, pepper and soaked with lemon. Will try carrots and asparagus. They look yummy.

We regularly grill a mix of vegetables in the summer. I always grill more than we need and add them to an omelette for breakfast and reheat them for a second day. I've never done just carrots, but will now!
I love roasted carrots (and parsnips, peppers, sweet potatoes, mushrooms and onions) ... never tried asparagus but will give it a go.
Oooh, these look yummy! Might have to try that!
