Cookies for the freezer...

Few things are better than a warm cookie fresh from the oven.
Right?

When I make a batch of cookies I rarely bake all of the dough at that time. With just Doug and I living in the house that makes for an awful lot of cookies hanging around - many of them going stale before we could eat our way through all of them. Oh sure, I float some cookie dough Carrie's way, but some of it goes in the freezer for a later date.

I bake some and freeze some. Rather than freezing a package of cookie dough, I take the time to roll them out in cookie-sized balls. For these I flattened them slightly, then I froze them until they were hard enough to not stick together. Once hardened in the freezer, I put them in a plastic freezer bag. Then when the mood hits us for fresh-baked cookies, they are baked and enjoyed by my guy and me. :o)

Cookies frozen like this take no more time to bake than a thawed-out cookie dough ball would. I bake at the same temperature and for the same amount of time. Whenever I visit my mom and step-dad I always take the time to make some cookie dough, rolled in balls, and placed in their freezer. I love knowing that once in a while they can enjoy a fresh-baked cookie made by me.

My peanut butter cookie recipe can be found here.

I'm going to suggest this plan to the baker of the house - I'm sure she would be delighted to give it a go.

Looks delicious! Here, between the kids and the neighbors it never seems to be a problem getting rid of the cookies!

Am I drummed out of the good housekeeper corp if I mention that I buy the Nestle "break and bake" cookie dough and bake the cookies a dozen at a time to get the same effect?

Don't worry Rinda, at least you make them! We don't really eat biscuits here, but I am impressed with your will power to freeze the dough and not just eat it ... because really, it's pretty yummy!

That is so clever - I don't bake much because it's too tempting to eat the lot ... this way I could always have fresh baked cookies to go with visitors'coffee - you are ACE!!
