Salad in a jar

I'm getting back into a routine of working 8-5:00, Monday-Friday.
Part of that routine includes packing a lunch so I won't be tempted
to head down the street on my lunch hour to pick up fast food.

I've seen this idea for salad in a jar on a few blogs and thought it was a great idea for a plan-ahead-meal {if you are the original inventor of said salad, please let me know and I will give you proper credit!}.

The idea is that the salad dressing is at the bottom of the jar where it doesn't touch the lettuce until you're ready to eat it. I made two of these jar salads and had the second one three days later and it was still nice and fresh.

From the bottom up there's:  garbanzo beans, balsamic salad dressing, diced chicken, cherry tomatoes, feta cheese, romaine lettuce. The idea is to shake it up before opening the lid, but I had the contents packed too tightly to move around. Plus, the jar was too deep to really navigate my fork through the mix. I'll tell you, this salad wasn't nearly as cute dumped out onto a paper plate. Anyway, maybe a different jar would do the trick, although you want to pack the ingredients fairly tight so they don't shake around and the dressing gets to the lettuce.

I'm pretty much just about left overs in a Tupperware, a Luna bar and a piece of fruit. Healthier and keeps me from eating up my salary!

I've often wondered about the eating out of the jar. There are so many visually pleasing ones on Pinterest. It does seem impossible since they have to be truly packed to serve the purpose. Guess to me it still translates to having to have the jar and a bowl/plate and that would mean more to carry than tupperware and my little dressing container.

I'm with the others who've used a tupperware dish with a separate little thing for the dressing. In the jar it looks so cute - but if I tried it, I can guarantee it would fall off the car seat, turn upside down, and be a wilted pile of mush by lunch time... But so proud of you for eating so healthy! I usually just take a Healthy Choice frozen meal - which works since I only go into the office once a week on average.

I take mine in a Tupperware! I nearly always take my own healthy lunch in - usually salad with either chicken, tuna or prawns. Very occasionally I treat myself to a sandwich made with lovely soft white bread from the lady who comes to our building in her van!

I have a packed lunch every day and mostly it is either toast and hummus or pasta.

That is SO clever - I may give that a try next time I do a double shift. I generally eat cold left-overs for lunch - that looks much more enticing!
Glad the job is going well.
I have just returned from Vegas; I took a parcel with me to post to you, but ... who knew it would be so difficult to find a post office along the strip???? So I had to bring it back with me and post it from here after all!!!!

You have to find the right jar/container and report back. So clever if you can get it to work easily. With my schedule, I can just eat when I get home, and then work the rest of the day from home.

Now I'm wanting a salad--jar or otherwise! After a day of snacking that sounds so refreshing! I had a free sandwich at Red Robin --birthday month treat--but I only hate half. Does that count for healthy? And it was a turkey burger! Love you!! xo
