Potluck Follies

Once or twice a year, someone at work will suggest a
potluck lunch and everyone starts planning.
What to bring...what to bring...



I prefer taking a dish that doesn't have to be re-heated in the microwave, and one that doesn't require me hauling my crock pot to the office. And I'd been thinking about this Frito taco salad that I'd made for a potluck {gosh, 20+ years ago?} and had decided it might be a good one to revive and share.

This salad was a good choice in terms of being able to serve it freshly mixed - I just took everything to work with me in separate containers, warmed the ground beef just a tad in the microwave, and mixed everything together in a large bowl just before we served up lunch.

My salad was not the big hit that it used to be in the 90's. I mean, it was consumed, one co-worker asked for the recipe, but even I was a bit let down. It wasn't as yummy as I'd remembered, and maybe it really did need the diced green onions added for a bit of extra kick.


It wasn't until I was creating this blog post that I realized where I went wrong on this salad. I Googled the recipe and found several versions - all calling for taco seasoning to be added to the ground beef. Hm...that would have added some extra flavor, for sure! I made it based on memory, and I really don't remember using the taco seasoning in the past, but no matter.

I'm pretty sure the next time we have a potluck at work I'll be signing up for something I know I can count on: dessert.

I have made basically the same thing, but with crushed Doritoes (nacho flavor) as the base. Served with salsa and sour cream on the side that can be added or not to people's individual taste. And yes, I think without the taco seasoning it would be a bit bland. I've always used taco seasoning with the meat.

The husband just mentioned that 90's Taco salad to me on Monday. I haven't made it in years but if I remember right we used Thousand Island dressing in ours.
As for what I take to Potlucks...everyone always request Veggie Bars ( more of an appetizer type item)!

It looks delicious, even if you felt the taste was not as good as yesteryear ... Or perhaps our palates have become used to more strongly flavoured food?

It is a bit of a standing joke amongst our family that when I go shopping for the ingredients for a family favourite recipe - I always forget at least one ingredient! If I'm trying something new, I have a list and every single thing is bought. Last time I made fajitas, I looked at the chicken strips and onions in the bottom of the wok and thought, hmm what's missing? Yup, I'd totally forgotten all the red and yellow peppers! Hey ho. I love this idea of making a sharing lunch, but had never thought of adding warm minced meat to a salad.

It certainly looks tasty enough! Potluck isn't something that's really popular round here...I can remember when I was little reading about potluck suppers in books and thinking there was something about the very word itself that made it sound delicious

We have a taco salad recipe that looks similar; definitely calls for taco seasoning in the meat and onions as well.

I'm off to a pot luck on Sunday, but am taking a chicken casserole since they were in need of a main course item. I've made it once here, and noted on the recipe that it would be a good "traveler." We'll see what folks think.

I like to bake so I always bring dessert. But now I'm trying to keep the family healthy so I'm trying to come up with some healthy appetizer recipes. I make a pretty good hummus.

At work we pair up for Lunch Club. We all put in some money at the start of the year, team up and it means each team cooks for the entire staff, those who join, each Monday lunch - it's great fun!
