Last week, for the first time in my life, I heard about hummingbird cake. And then, I heard about it again on my friend Karen's blog - that was twice in one week!

I had pinned the first cake I saw. It was a recipe from Bakerella and after reading through it I thought it sounded a lot like carrot cake, but with bananas, pineapple, and toasted pecans instead.
There were some ripe bananas left in my work kitchen at the end of last week, so those came home with me and made their way into hummingbird {cup}cakes to be brought back to work on Monday morning.
This is random, but I loved that the bananas in this recipe were chopped as opposed to mashed like you do for banana bread. Not only did they look better, but it gave the batter a little more chunk.
This cake recipe was a big hit {at home and at the office!},
and the frosting was really yummy too.
This one will be made again someday, for sure.

They look delicious! I've not heard of Hummingbird cake either and was expecting it to be a recipe from the Hummingbird Bakery. Thinking that you might have visited, during your recent trip to London Town.

Oh my goodness - MY MOM who is in Heaven loved hummingbirds and always had them at her feeders! She had to fill her feeders, as many as 5 of them, three times a day because the hummingbirds emptied them. I MUST make this cake/cupcakes to honor my mom - thanks so much! xoxoxo
I've eaten Hummingbird cake but never made it - all the chopping put me off! I might give it a go if it has the Deb seal of approval!
Yep! Penny has made it and it is lovely! Good idea to make it as cupcakes - might have to get her to do that!

Funny...I just heard of it a couple weeks ago when one of my friends mentioned that a co-worker made it for someone in the office. She said that it took a long time to crack all those little hummingbird eggs.
I've been catching up this morning with your blog, and enjoying all your posts. I'm feeling a bit overwhelmed trying to catch up with everyone after such a long time away from the computer, so I'm not leaving comments on all the posts, but wanted to say I'll be comparing your recipe with the one I used. We were a bit lukewarm about the cupcakes I made, but I used a recipe where the recipe had been "slimmed down," so that might have been the problem.
