My old fashioned cornbread - it's the best!


Can I just say that I love my cornbread recipe better than any other that I've ever tasted?

Oh, I'm sure there are those of you who might disagree and say, "No, Deb, I have best recipe..." and that's ok. I like mine the best, and so do Doug and Carrie. {Confession: One time, several years ago, I made cornbread from a boxed mix and Doug and Carrie loved it and I was a bit irritated by that. I haven't bought a boxed mix since! Hmph!} :o\

Anyway! I had some beef stew in the freezer and today is particularly cold outside so tonight for dinner we'll have a bowl of hot stew, along with some fresh baked cornbread that I just made during my lunch hour.

The recipe I use is one that was on the side of the cornmeal box for ages. A few years back they changed the recipe, but I still use the original, and I've changed it up a bit using melted butter instead of vegetable oil. I'll share it with you here in case you'd like to give it a try:

Easy Corn Bread
1 cup all-purpose flour
1 cup yellow cornmeal
1/4 cup sugar
2 tsp. baking powder
1/2 tsp. salt
1 cup milk
1/4 cup melted butter
1 egg

Heat oven to 400°. Grease 8-9 inch pan.
Combine dry ingredients and set aside.
Combine milk, butter, and egg and mix well.
Add wet ingredients to dry ingredients and
mix just until combined (do not over mix).
Batter will be slightly lumpy.

Bake 18-20 minutes or until light golden
brown and wooden pick inserted in center
comes out clean. Serve warm.

Now there's an idea to have with stew, as a change from good old English Dumplings!
You know, I never had cornbread and have wondered how it was made. I should/could have found out a recipe for myself, I'm sure, but now you have provided me with a tried-and-tested Debs-family-say-it's-good recipe to make my very own American-style Cornbread!
My BFF and 3 starving kids are threatening a visit later this month. This could be a novel, tasty, but easy tummy-filler (to save on the cost of extra "posh" bread from the shops)! Thanks Deb!

I forget how American corn and cornbread are! I have to admit to liking my cornbread fancied up wit whole corn bits and cheese (maybe even a few peppers).

Deb, that looks so good, I'm going to go make it now. I've been adjusting the box mix with extra goodies, but this one sounds so good from scratch.

Carrie, I'm going to make some and eat it all by itself!!

i love cornbread. could probably eat the whole pan in one sitting. not good for the old buttocks.

Love cornbread! Love hot cornbread with butter and apple butter on top! Love cold cornbread crumbled in a cup with cold milk on top (I guess you could call that cornbread cereal!) It's embarrassing to admit how much I've eaten in my life! This is what happens when you are born in the South!! Love this post, too, Sweetie! xo

I've read about cornbread so many times - and I don't think I've ever seen a picture until now. I've certainly never tasted any - this really does look delicious, so I'm another one who will be on the lookout for cornmeal in the supermarket

Cornmeal? Do they sell cornmeal in the UK? I've never seen it and can't imagine what a good substitute would be. Which is very annoying,because that looks dee-lish-uss and would make a huge change from suet dumplings with stew!

Sounds delicious,Deb....have never noticed cornmeal sold over here....but think polenta is sort of the same....so may try it with that.

too funny! I have beef stew and cornbread on the menu for tmw night when Baby Boy gets home from college :) Are you referring to Jiffy? My grandmother in her later years thought I was letting her have cake with her meal when I'd use their box mix :)

You won't find me arguing, Deb - I don't even have a recipe for cornbread! Well, I do now, 'cos I'm noting down yours. I've never even tasted it before but it looks delicious :-)

I've never had cornbread before! I'll have to have a look and see if we get yellow cornmeal over here and then perhaps I'll have to give it a try. I'll let you know if I find it :)
