The whole enchilada on a lunch hour.

Occasionally I impress myself {and Doug}and plan ahead for dinner.
.
One of the perks of being me is that I get a 2-hour lunch break. Perk #5,381 is that I live close enough to the office that I can come home for lunch. Sometimes I prepare dinner during my lunch break so that Doug can heat it and have it ready when I get home at 6:30.
I think that kind of makes Doug feel somewhat
useful himself...helping with dinner, you know?And I always leave dinner directions
disguised as a love note.
Yummmmm...chicken enchiladas, hot from the oven.
These were made with leftover grilled chicken I had in the freezer, a can of green enchilada sauce with sour cream whipped in, some cheddar cheese, diced green onions, and corn tortillas. No photo of the plated-up-enchilada as they always fall apart on me when I dish them up. {Don't you know that this annoys me to no end because I'm all about the presentation!} The trick is to make sure Doug is good and hungry so he doesn't mind {not that he does anyway}. And, I told him it was an enchilada casserole. ;o)

In a word--YUMMY! In fact, I so want one of these right now that I'm going to my freezer and taking out the last of the leftover enchilladas from Grandma's party! I knew they'd come in handy one day! However, I'd trade them for one of your homemade ones anyday! xo

These look great Deb! Lucky you - 2 hours for lunch! And here's my tip for getting them out in one piece. Use one of those really wide spatulas they make for grilling fish. Just separate them a little, and wedge it under. Hope it helps!

Holy Yummy! We love cooking but when it comes to enchiladas I let Greg handle it. He makes the most delicious cheese enchiladas with corn tortillas. I took them to work for a potluck once not sure if they would like them and they were gone before I got more than one. I was informed that I could bring them again anytime.

Dinner tomorrow will be cheese enchiladas. Thanks for the idea!

Can you believe I've never made enchiladas before? This may be something most people in our house would eat - I'll have to see if they do an enchilada sauce over here. Thanks for the idea xx

Yum! But I'm the only one in my family who'd eat these (*sigh*) which makes it less worth making them :-(
