Upside-down is the way to go.


It had been a while since I'd made a pineapple upside-down cake, so this past weekend I did just that.

I keep it simple: just use a basic yellow cake mix, drain the canned pineapple and use the juice as part of the liquid for the cake.Spray the bottom of the pan with non-stick spray and arrange the pineapple slices in the bottom of the pan... a maraschino cherry in the middle of each... and a generous sprinkling of brown sugar before pouring the cake batter on top.
And it never fails: when I flip this over to remove it from the pan, a few of the pineapple slices stay stuck to the bottom. I don't panic! Just use a spatula to lift them off the pan and flip them back into their spot on top {uh....or bottom?!?!} of the cake.
Saved a piece for Carrie because that's the kind of mom I am.

This brought back happy memories for me - pineapple upsidedown cake is the only thing I ever made in school cookery class which actually turned out the way it was supposed to. An old friend and I were talking about it just the other day. I bet this one tastes even better, mind you!

Pineapple upside down cake is really making a comeback. My mother made it when I was a kid, but then nothing for many years. Yours looks marvelous!

I've never made this sort of cake before, but, it looks like something that is quick and simple and super delicious!
Your post has made me laugh though, the young man in our house is not a fan of pineapple and just this weekend past he had a massive melt down when confronted with the thought of having to consume pineapple ..... perhaps I may show him this photo and suggest that is what I'll be cooking next? ;-) No, I'm not that mean!

Wow, I can't remember that last time I had pineapple upside down cake! We have been eating a lot of pineapple recently, but on it's own, just fresh! That looks yum!

about 2 years ago when I made one for a friend who mentioned he hadn't had one since he left home 15 years beofore. They are a magical combination - yours looks very yum

It is Pineapple cranberry upside down cake. It is beautiful to look at and even more delicious to eat and I don't even like cranberries, LOL Hope you will give it a try.

Okay, that's something you can definitely make for me on my next time in AZ! Another twist--do you remember ginger-peachy upside down cake? Melt a couple of tablespons of butter in a square pan, sprinkle brown sugar on top of that, arrange sliced canned peaches in a pattern of your choice, then pour a prepared gingerbread mix on top. Serve with whipped cream. I don't think I've made that since you kids were small! But I think I might this weekend! Thanks for the memory! xo
