My three sisters-in-law came over Friday night for a girl's night on our patio. I made a few types of hors'devours for the evening, including these light and yummy cucumber sandwiches.
.
* Softened cream cheese mixed with fresh chopped basil,
spread onto both pieces of bread.
* Thin slices of cucumber arranged on top of cream cheese spread.

* Mash 'em together and cut in quarters.

I love having a basil plant on my patio!

And these sandwiches are even better thenext day, once the flavors have blended.

PS: I had such a good time with my SIL's. They are my sis-in-laws from Doug's family - his sister, Meta, and his two brother's wives, Janet & Laurie. Oh, we did drink ourselves some wine and had a great time ~ as usual.

Sounds like a great evening,Deb...and those sandwiches look wonderful.I love 'tea time'...and think it's a great shame that it's a tradition dying out over here....there's nothing like a traditional English tea time.
Afternoon tea is a great tradition ~ no excuse needed to eat dainty sandwiches and cake! Glad to hear you had a lovely evening.
We will have to make you an honorary Brit Deb! Cucumber sandwiches for tea time is definitely a qualification for Britishness!
Happy hour over here involves alcohol ;-)

I want to make those sandwiches! Do you have any other tasty appetizer recipes? I have a random ques. for you, any ideas on the best adhesive to use with diamond dust? What a great way to spend an evening .... happy hour is a 'drink as much as you can of the cheaper alcohol' type of thing in Australia that pubs run to get business - we like a drink over here!
Tea, as in afternoon tea, is more the cake and cup of tea to drink type of thing.
I had never thought about happy hour as tea; one is about rejuvinating to face the rest of the day and the other is about relaxing into the evening.
But I think it's a cool comparison.

Our happy Hour sounds very much like Amy's.
But cucumbers always make me happy - I have just eaten a cucmber sandwich for lunch. If I had reached you ten minutes earlier I would have done it like this. There's always tomorrow..

I love cucumber sandwiches, your "tea" party sounds delightful! We are even known to have these at our wedding receptions (open faced) in the Southern US.

They certainly do look very yummy and I'm with Deb and Mel - happy Hour makes me think of Alcohol- specially cocktails !
Tea may sound more civilized, but happy hour sounds more funny. I bet those sandwiches were delicious.
