Valentine Sweets

I have been wanting to make these cute little cake balls that I've seen over at Bakerella's website, and last weekend I finally did it. I thought they'd be a sweet Valentine treat! There are a few steps to making these little guys, but they are fairly easy to do.

You just bake your cake according to directions on the box (or in the recipe) and let it cool completely. I found a cherry chip cake mix at my grocery store and thought that would be the perfect filler! Then you crumble it into a large bowl and mix in one can of ready-made frosting. I used creamy vanilla.

After I rolled the mixture into balls, it seemed too soft to dip in the melted candy coating, so I placed the cookie sheet in the freezer for a few hours. Plus, the candy coating sticks and hardens quicker if the cake balls are cold before dipping. (I suppose you could freeze them for weeks in advance if you wanted to make these ahead of time, and dip them closer to the time you are giving them as gifts.)

This is not a project for those who don't like to get messy! This part was a sticky mess!

These cute little cupcake cups were my inspiration for making these as cake balls, rather than cake pops like Bakerella does.
.
I used toothpicks to dip the cake balls in the melted chocolate, then placed them directly into the paper cups to dry and harden.

Hubby called me at work yesterday (NEVER calls during the day because he knows I can't chat) to ask if it was ok for him to have a cake ball (or two). He thought they might be gifts that weren't for our personal consumption. I have him trained well. :o)

Check out Bakerella's website when you get a chance. She has so many ideas for cute ways to decorate cake pops! The possibilities are endless!

Oh, I *love* these! They look amazing - beautifully photographed, too x And I'm suitably impressed at how well-trained your husband is!! Though to be fair to mine, he does usually check first :-)

These are so cute! When I first saw them, my thought was the same as Margaret's! Forget the cupcakes! You may have inherited the ugly cupcake gene from me--even when I try to frost them, they still look bad--but who cares-- they are always eaten! xo
